MAKE AND TASTE STILL WARM MOZZARELLA

Sara will welcome you to her farm (in Italian “masseria”) surrounded by olive trees, pastures, farmland and dry-stone walls. This is where Sara grew up and learned everything she knows about cows, cheese and rural traditions. No matter what season you visit Sara’s farm, you will always be impressed by the richness of nature and its colours.
First, Sara will explain to you how she looks after her cows and bulls, a hundred head of cattle that represent the heart of her farm. In fact, besides being as attached to them as if they were her own children, their well-being is essential for the quality of the milk and thus of the cheeses that Sara produces.
During the practical part of the experience, Sara will explain the various steps she takes every day to transform freshly milked milk into delicious mozzarella, ricotta, caciocavallo and many other types of cheese. You will be able to see with your own eyes with which expert movements Sara works the “pasta filata”, which you can then shape to make mozzarella yourself, to be tasted on the spot, still warm.
The experience will end with a generous tasting of the fresh and aged cheeses that Sara produces on the farm, all made by hand and with the use of whey starter (you will find out what this is during the experience ) according to the most authentic tradition. This provides an inimitable taste to its dairy products and makes them low in lactose.
