PRIVATE - Abruzzese Cooking Class

An authentic journey into the heart of Abruzzo’s culinary tradition
Accompanied by a local chef, participants will learn to prepare two of the region’s most iconic dishes: pasta alla chitarra — the queen of festive tables — and pallotte cacio e ove, the delicious vegetarian cheese-and-egg meatballs of peasant cuisine.

In a warm, convivial atmosphere, the experience blends hands-on cooking with stories about local traditions, ingredients, and the cultural heritage of Abruzzo’s gastronomy. The day concludes at the table, enjoying the dishes prepared together, paired with local wines and a traditional dessert.

Program:

  • Welcome aperitif: bruschette with Abruzzese extra virgin olive oil, homemade bread, and a glass of local wine or soft drink.

  • Introduction: history of Abruzzo’s cuisine and its local ingredients.

  • Hands-on cooking class:

    • Kneading, rolling, and cutting fresh pasta using the traditional chitarra

    • Preparing pallotte cacio e ove (cheese and egg balls) with local cheese, eggs, and rustic bread

  • Cooking and tasting tips: discover the secrets to a perfect tomato and basil sauce using local produce.

  • Convivial tasting:
